Creamy Morel Sauce

Ingredients

  • 1/2 pound Fresh morels, cleaned and sliced

  • 2 tablespoons Olive oil

  • 1 small Onion, finely chopped

  • 2 cloves Garlic, minced

  • 1 teaspoon Dry adjika spice

  • 1 cup Heavy cream

  • 1/2 cup Chicken or vegetable broth

  • Salt to taste

  • Freshly ground black pepper to taste

  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

  1. Prepare the Morels: In a heavy-bottomed skillet, heat the olive oil over medium heat. Add the sliced morels and sauté until they begin to soften and release their juices, about 5-7 minutes.

  2. Sauté the Aromatics: Add the onion and garlic to the skillet, cooking until the onion becomes translucent and fragrant, about 3-4 minutes. Sprinkle the dry adjika over the mixture and stir to combine.

  3. Simmer: Pour in the broth and heavy cream, stirring well to combine. Reduce the heat to low and let the sauce simmer gently. The sauce should thicken slightly as it cooks. Season with salt and pepper to taste.

  4. Finish and Serve: Once the sauce has reached your desired consistency, remove from heat. Stir in the fresh parsley for a touch of color and additional flavor.

  5. Serve hot, ideally over freshly toasted bread, grilled chicken, or tossed with your favorite pasta.
