Suneli Valley presents Thyme-Infused Grilled Trout, a dish that embodies the spirit of Georgian spring. Infused with aromatic wild thyme and the rich flavors of Khmeli Suneli, this simple yet flavorful recipe uses freshly caught trout, offering a taste as authentic as Georgia itself.

Ingredients
- 2 medium-sized trout, cleaned and gutted
- 4 tablespoons fresh wild thyme (Or garden thyme will do)
- 3 tablespoons Khmeli Suneli
- 4 cloves garlic, minced
- 1 lemon, half sliced, half juiced
- 3 tablespoons olive oil
- Salt and black pepper, to taste
Directions
Prepare the Trout:
- Rinse the trout under cold water and pat dry with paper towels.
- Season the inside of the trout with salt and pepper.
- Stuff the cavity of each trout with fresh thyme, lemon slices, and some of the minced garlic.
Marinate
- In a small bowl, combine olive oil, lemon juice, the remaining garlic, and Khmeli Suneli to create a marinade.
- Brush the outside of the trout generously with the marinade.
- Allow the trout to marinate for at least 30 minutes in the refrigerator to allow the flavors to infuse.
Grill the Trout
- Preheat the grill to medium-high heat.
- Oil the grill grates to prevent sticking.
- Place the trout on the grill, skin side down. Grill for 7-8 minutes on each side or until the trout is cooked through and the skin is crisp.
