  • 1 dynia
  • 1,5 szklanki ryżu
  • 3,5 uncji śliwek
  • 1,75 uncji suszonych moreli lub jagód goji

Instrukcje:

  • Krok 1:
    Umyj i wysusz zewnętrzną część dyni. Odetnij górną 1/4, zachowaj ją, ponieważ będzie używana jako pokrywka. Za pomocą łyżki wyskrob wnętrze, błonnik i nasiona. Opłucz wnętrze dyni i osusz.
  • Krok 2:
    W rondlu zagotuj 3 szklanki wody. Dodaj ryż i zmniejsz ogień do niskiego. Gotuj ryż przez około 15 minut. Pamiętaj, aby nie gotować ryżu dokładnie. Odcedź pozostałą wodę.
  • Krok 3:
    Morele i suszone śliwki pokroić w drobną kostkę, grubo posiekać migdały i orzechy włoskie. W misce wymieszaj ryż, posiekane owoce i orzechy. Dodać rodzynki, cukier, miód, zmielone goździki i cynamon. Dokładnie wymieszać.
  • Krok 4:
    Rozgrzej piekarnik do 350°F. Napełnij dynię nadzieniem, zalewając wierzch nadzienia ¼ szklanki gorącej wody. Ponownie nałóż górę dyni, połóż ją na blasze do pieczenia i piecz przez 1 godzinę lub do miękkości.
  • Krok 5:
    Pokroić w kliny; podawać.

Sweet Rice Stuffed Baked Pumpkin

Ingredients

  • 1 pumpkin

  • 1.5 cups rice

  • 3.5 oz prunes

  • 1.75 oz dried apricots or goji berries

  • 1.75 oz raisins

  • 1.75 oz almonds

  • 3.5 oz walnuts

  • 1 Tbs honey

  • ½ Tsp cinnamon

  • ¼ Tsp ground clover

  • 1.75 oz sugar

Directions

  1. Wash and dry the exterior of the pumpkin. Cut the top 1/4 off, save it as it will be used as a lid. Using a spoon scrape out the insides, fiber, and seeds. Rinse the inside of the pumpkin, and pat dry.

  2. Bring 3 cups of water to a boil in a saucepan. Add the rice and reduce the heat to low. Cook the rice for about 15 minutes. Make sure not to cook the rice thoroughly. Drain the remaining water.

  3. Cut the apricot and prunes into small cubes, coarsely chopping the almond and walnuts. In a bowl, mix together the rice, chopped fruit, and nuts. Add raisins, sugar, honey, ground clove, and cinnamon. Mix thoroughly.

  4. Preheat the oven to 350°F. Stuff the filling into the pumpkin pouring the ¼ of cup hot water over the top of the filling. Put the top of the pumpkin back on, place it on a baking sheet, and bake for 1 hour or until soft.

  5. Cut into wedges; serve.
