Ingredients
A pinch of Khmeli Suneli
17 oz – of Fresh Spinach
2 – cloves of garlic
3.5 oz of Walnuts
1 bunch – Cilantro
1 small onion
As desired – Svanetian salt
Freshly ground black pepper
Directions
Boil a gallon of water.
Thoroughly wash the spinach, putting it in a bowl, pour the boiling water over it and let it sit for 1 minute. Throw the spinach into a colander and squeeze the water out.
Wash and chop the cilantro. Peel and chop the onions and garlic, mix them in a blender along with the walnuts, cilantro, spices, salt, and pepper. Continue blending until thoroughly mixed.
Run the parboiled spinach through a meat grinder, then mix it with the nut mixture. Roll the mixture into balls and put them on a plate.
Garnish with greens or pomegranate seeds and serve.
