Ingredients:

  • 2 Medium Eggplants
  • 2 cups walnut halves
  • 1 teaspoon adjika seasoning or per taste
  • ½ teaspoon svanatian salt or per taste
  • ¼ cup water
  • 2 Tablespoons olive oil
  • ¼ cup finely chopped cilantro
  • Pomegranate seeds, for garnish

Instructions:

  • Step 1:
Remove the ends from each eggplant and slice lengthwise into 1/4-inch-thick slices. Arrange on a baking sheet and sprinkle generously with salt. Set aside for about 30 minutes to allow the salt to pull the moisture from the eggplants.
  • Step 2:
Meanwhile, run walnuts through a blender until it obtains the consistency of hummus, and add to a bowl. Add in the adjika, svanatian salt, and cilantro. Mix in bowl as you slowly add in the water.
  • Step 3:
Pat the eggplant slices dry with a paper towel.
  • Step 4:
In a large skillet over medium heat, heat a few tablespoons of olive oil. When ready add in the eggplant slices -- it's likely that you will need to work in batches. Fry eggplants until softened and lightly golden brown, about 2-3 minutes per side. Transfer to a paper towel-lined baking sheet and allow to cool.
  • Step 5:
Working one at a time, spread about a tablespoon of walnut paste evenly onto each eggplant slice. Roll up into a coil and repeat with the remaining eggplant slices.
  • Step 6:
Garnish with pomegranate seeds and serve.
