Bazhe sauce is a flavorful Georgian sauce that consists of walnuts, garlic, cilantro, and spices.The sauce has a smooth consistency and a pleasant aroma. In less than ten minutes, this velvety sauce can be ready for spreading, dipping, or adding to recipes! Bazhe sauce is used on chicken, fish, Ghomi, and anything else you want to dress up with this delicious sauce.

Bazhe Sauce | Georgian walnut sauce

Ingredients

  • 2 cups walnuts 

  • 1-2 garlic cloves

  • 3-4 tbs cilantro

  • 1/2 tsp khmeli-suneli

  • 1/2 tsp utskho-suneli  

  • dash of ground pepper 

  • 1 tsp ground saffron

  • 1/2 tsp red wine vinegar 

  • salt

  • 3 tbsp water 

Directions

  1. Using a meat grinder, grind the walnuts, turning them into a paste.  

  2. While stirring the walnut paste, slowly add water to thin out the paste. Start with 2-3 tablespoons of water and increase as needed. We are going for the consistency of sour cream.

  3. Peel and crush the garlic. Add finely chopped cilantro leaves to the garlic and a pinch of salt. Set aside.

  4. Add the Khmeli-suneli, Utskho-suneli, ground red pepper, and saffron to the walnut sauce. Mix.

  5. Add in the chopped garlic with herbs we set aside earlier. Pour in the wine vinegar and mix everything to combine. Enjoy!
