Directions
Cut a thoroughly washed chicken along its breast and butterfly it. Pat dry with paper towels and rub with salt. Preheat the pan; add oil and the flattened chicken. First fry it with skin side down over a high heat for 5 minutes, then lower the heat and continue frying for another 5 minutes. Flip to fry on the other side for 12-16 minutes. To thoroughly fry it, place a cast iron press over or fry it in a special pan with a screw press.
After the chicken is fried on both sides, transfer it to a separate bowl. Leave the frying pan with leftover fat over a low heat.
In a separate bowl, combine crushed garlic, salt and 200ml boiled water. Add it to the fat and stir until dissolved. Pour the sauce over the chicken and serve.
