Tarragon Soda Cocktail

Ingredients

  • Club soda

  • 2 cups of water

  • 1 cup of sugar

  • 6 oz of tarragon

  • 1 Lime

  • 1 Lemon

  • Optional: Hendricks Gin

  • Optional: Chlorophyll as a food coloring

Directions

  1. Thoroughly wash the tarragon and clean the lime and lemon. Pat dry.

  2. Grate a teaspoon of zest from the lime and lemon. Squeeze the juices of both fruits into a cup.

  3. Using a mortar and pestle, muddle the tarragon.

  4. Place the tarragon, zest, and sugar into a saucepan mixing in the 2 cups of water.

  5. Bring to a boil over medium heat, stirring occasionally.

  6. Once the syrup comes to a boil, remove it from the heat and let cool to room temperature, then strain.

  7. Mix 2 oz of syrup with 1oz lemon/lime juice, optionally add chlorophyll, ice, and top off with club soda. If desired, add 1.5oz of Hendricks and enjoy!
