This Georgian dish is healthy and flavorful, and perfect for a weekday meal. The green beans are cooked with garlic and onions, then tossed with walnuts for a bit of crunch. Made with fresh produce, adjika and herbs. This dish is simple and delicious. Serve it with bread, and you have a complete meal.

Georgian green beans with walnuts

Ingredients

  • 28 oz green beans

  • 7 oz walnuts

  • 8 onions

  • 4 garlic cloves

  • 1 bunch of fresh coriander

  • 1 bunch fresh basil

  • 1 bunch fresh dill

  • 1 tsp or per taste adjika

  • 2 tsp vinegar

  • salt to taste

Directions

  1. Top and tail the green beans, breaking each into two or three pieces.

  2. Wash and then boil the green beans in a saucepan with salty water (add salt to taste). Once cooked, drain and set the beans aside to cool.

  3. In a separate bowl, mince the walnuts, garlic, coriander, basil, dill, and salt using a meat mincer or grind them with a pestle and mortar.

  4. Add finely sliced onions to the mixture and season with additional salt.

  5. Stir in the vinegar to taste.

  6. Toss the cooled green beans with the walnut mixture until thoroughly mixed. Finish with a touch of adjika.
