Pkhali is a traditional Georgian food that can be made with either fresh or pickled beets. The dish is usually made with fresh garlic, adjika, and svanetian salt. In addition to walnuts, this dish may be paired with a variety of other nuts such as almonds or pistachios.
Ingredients
-
A pinch of Adjika
-
2 teasoon of salt
-
2 medium sized beets
-
2 cloves of garlic
-
3.5 oz of Walnuts
-
1 bunch of Cilantro
-
1 small onion
Directions
Boil a gallon of water adding the 2 tsp of salt to it.
Wash and peel the beets, add them to the boiling water, thoroughly cook until tender.
While the beets are cooking, wash and chop the cilantro. Peel and chop the onions and garlic, mix them in a blender along with the walnuts, cilantro, Adjika, and Svanuri Salt. Continue blending until thoroughly mixed.
Once the beets are cooked, take them out of the water, chop them finely, and squeeze the juice out by hand, draining it.
Run the cooked and chopped beets through a meat grinder, then mix it with the nut mixture. Roll the mixture into balls and put them on a plate.
Garnish with greens or pomegranate seeds and serve.
Recipe Note
Best Way to Serve Pkhali:
Serve beet pkhali slightly chilled or at cool room temperature - this allows the earthy sweetness of the beets and the richness of the walnut paste to harmonize perfectly. Arrange the pkhali balls on a platter and drizzle with a touch of pomegranate molasses or sprinkle generously with fresh herbs or pomegranate seeds for brightness.
In conclusion, beetroot pkhali is a flavorful and healthy Georgian dish that is perfect for any occasion. It's vegan, gluten-free, and packed with nutrients. Give this dish a try the next time you're looking for a new and exciting way to enjoy beets.
