Chirbuli is an incredibly flavorful tomato and egg breakfast and the perfect choice for any day of the week! Chirbuli is commonly said to have originated from Adjara whose cuisine wasinfluenced by North African and Middle Eastern countries. Adjara, one of the oldest regions of Georgia, sits right along the Black Sea, where it had regular contact with traders from other parts of the world who brought influence to Adjarian cuisine. North Africa has a similar dish to Chirbuli called Shakshuka.

Ingredients
4-5 medium-sized tomatoes
4 eggs
1 medium-sized onion
2.5 tbsp parsley
1 tbsp vegetable oil

Directions
Preheat oil in a large skillet on medium heat. Add finely chopped onions and saute over low heat until golden. Add crushed garlic.
Add peeled and chopped tomatoes to the skillet allow to simmer for about 7-8 minutes, then season with salt to taste.
When the tomatoes are thoroughly cooked, crack the eggs into the tomatoes. Cover with a lid and cook until the egg whites are set, and the yolk is still runny.
Remove from heat and garnish with chopped parsley before serving.
