Ingredients
1 lb dried red kidney beans, soaked
2 medium yellow onions finely chopped
3 garlic cloves
1 bunch cilantro
2 cups chopped celery with the leaves
-
2 tsp. khmeli-suneli
2 tsp. dry adjika
2 tsp vegetable oil
3 tbsp 100% pomegranate juice
Salt to taste
Directions
Soak the beans in cold water for at least 12 hours the night before.
Drain the soaking water and add the beans into a heavy-bottomed pot. Add water to the beans. You want to have at least two inches of water above the level of the beans. Bring the beans to a rolling boil. Turn the heat down to medium and cook until the beans are tender—about 1 hour.
When the beans are cooked, drain the cooking water into a bowl. Reserve this liquid for later.
Using a potato masher, mash the beans. Set aside.
Heat a skillet on medium-high heat and add oil. Add the finely chopped onion and cook until softened and golden. Add to the pot with beans along with finely minced garlic. Pour 4 cups of the previously reserved water into the pot with the beans, cover, and bring to a gentle boil.
Once it comes to a gentle boil, add the cilantro, celery, khmeli-suneli, dry adjika, pomegranate juice, and a pinch of salt. Mix until combined and cook on medium-low heat for 15-20 minutes. Keep an eye on the beans and add additional reserved water as necessary. Remove from heat. Adjust seasonings to taste.
