Spinach Pkhali

Ingredients

  • A pinch of Khmeli Suneli

  • 17 oz – of Fresh Spinach

  • 2 – cloves of garlic

  • 3.5 oz of Walnuts

  • 1 bunch – Cilantro

  • 1 small onion

  • As desired – Svanetian salt

  • Freshly ground black pepper

Directions

  1. Boil a gallon of water.

  2. Thoroughly wash the spinach, putting it in a bowl, pour the boiling water over it and let it sit for 1 minute. Throw the spinach into a colander and squeeze the water out.

  3. Wash and chop the cilantro. Peel and chop the onions and garlic, mix them in a blender along with the walnuts, cilantro, spices, salt, and pepper. Continue blending until thoroughly mixed.

  4. Run the parboiled spinach through a meat grinder, then mix it with the nut mixture. Roll the mixture into balls and put them on a plate.

  5. Garnish with greens or pomegranate seeds and serve.
