½ cup - Grapeseed oil
2.5 - Medium White Onion
2 tbs Black Pepper
3 tbs - Svanetian Salt
(+-) 2 tbs - Salt
1 tbs - Khmeli Suneli
4 - 7 Bay leaves
2 bunches - Italian Parsley
½ cup White vinegar
½ cup -Mineral water (Topo Chico, San Pellegrino or if possible Borjomi)
8-10 lbs - pork shoulder butt 1.5-inch cubed
Fresh veggies – mushrooms, bell pepper, red onion
✔️ Start by cubing the meat into 1.5-inch pieces trimming off any access fat, and place in a large bowl or pot.
✔️ Dice the onions and chop the parsley, set aside. Mix the grapeseed oil along with salt, pepper, seasonings, and vinegar.
✔️ Add that mixture along with the onions, parsley, bay leaf, and ½ cup of mineral water to the container of cubed meat and mix thoroughly. Marinate overnight for no less than 8 hours in the refrigerator.
✔️ On The day off, if using veggies, lightly oil the prepped vegetables and sprinkle with Svanetian salt.
✔️ Next skewer the meat on metal kebab skewers, alternating meat chunks and vegetables. Fire up the grill bringing it up to 425 degrees.
✔️Placing the skewers on the grill cook them until the center of meat registers about 145 degrees (f) turning the skewers occasionally, about 8 – 9 minutes per side.
